Indian Sushi And Wine Demo With Masterchef's Chris Hale
Some of our most successful food and wine evenings at the Wine School down the years have involved our resident chef, Tom Guise, and his fabulously easy to understand Cookery Demos. On one such night last year, we met Chris Hale- a former quarter finalist on BBC 1's Masterchef. Foodies amongst you may remember Chris's signature dish- the rather head-turning Indian Sushi- which attracted plenty of praise from both judges John and Greg. We are delighted to welcome Chris to the wine school tonight to sample some of his experimental fusion of Indian flavours with Japanese presentation.
Chris will be demonstarting how to roll the perfect sushi, how to spice your meat and fish with Indian seasonings and also how to prepare beautiful chutney and relish to lend an authentic flavour to your own South Asian cookery. Chris will prepare some sample dishes live in class, answer questions about his Masterchef experience and also how he has made the transformation from enthusiastic ametuer cook to professional chef with his own catering and pop-up business called Pop Up North.
As ever Laura will be on hand to help host the evening and provide a delicious selection of wines to partner Chris's food. Please note, this is a cookery demonstration evening, food and wine will be provided in taster sizes rather than a full meal. Tonight we shall be tasting-
- tuna cumin nori roll (with Austrian Gruner Veltliner)
- tandoori chicken nori roll (with Amontillado Sherry)
- south indian pepper water & date and tamarind chutney
- carrot pachadi (with Alsace Gewurztraminer)
- salt baked indian lamb (with Californian Pinot Noir)
- cardamom brulee (with Australian Orange Muscat)
